Certified organic chef (BA)
More and more restaurants and hotels want to change their cooking habits and offer top-quality meals of ecologically produced ingredients and thus offer their guests a special service.
Even for experienced chefs this represents a new challenge, as the necessary knowledge and skills are not part of the professional training courses for Dietary cooks or for Chefs.
Participants will learn how to create a wholesome menu, to handle work processes, to calculate quantities for orders they have to place and cooking practice for organic cooking. So they become contact persons for issues related to the implementation and realisation of a healthy and delicious diet in gastronomy.
During the course, the participants will learn about legal criteria for organic certification. Positive physiological aspects of nutrition and their necessity for medical nutrition therapy belong to the contents of this course, as well as the professional handling of organic food.
You will deepen and consolidate theoretical knowledge and practical cooking skills by means of several one-day study visits at certified organic growers.
Certificate of the University of Cooperative Education (BA) Mecklenburg-Western Pomerania
This course helps you to prepare for the examination at the University of Cooperative Education Mecklenburg-Western Pomerania You will take both, a written and a practical examination at the responsible examination board of the BAMV. Upon successful completion you will be given a certificate and a document that entitles you to hold the title "Certified organic chef (BA)". The certificate documents your competencies in the tested subjects under private law.
