There is hardly any other beverage that helps companies earn such a high margin. But for coffee making the high competence of the specialist staff is a decisive factor.
Growing, trade, ingredients, roasting and making coffee specialities with different methods and machines - attract bon vivants of coffee to your house.
The Sommelier du cafe has knowledge about different qualities of coffee, can identify them during tastings, and assess them. S/He successfully uses this knowledge when dealing with guests, and attracts guests who love coffee, and makes them regulars at your house.
Requirements for admission
Successful participation in the Barista Basic Seminar.
In additon to that, the course requires relevant work experience in the hotel and restaurant industry, coffee shops or coffee bars, with roasting houses, manufacturers or trade.
Contents of the course
- Growing areas, growing, harvesting, and treating coffee
- Differentiation of sorts that are relevant for the world market
- Raw coffee trade, assessment and storage
- Coffee processing - de-caffeinated, well tolerable coffee
- Roasting, procedures within the coffee bean during roasting, development of flavours, techniques, blending
- Professional tasting and assess self-roasted coffee
- Packing, grinding, storage, distribution
- Adjusting machine and mill, maintenance
- Making espresso with a machine
- Suitable proveniences for espresso blends
- Special requirements concerning milk, frothing milk
- Latte art, the heart, the leaf, decorations with chocolate sauce
- Spices
- Tools, dishes, porcelain
- Specialities you can make on the espresso machine as well as with alternative brewing methods
- Set-up and cost estimate of a selection of coffees
- Professional sale and guest service
Scope of seminar
40 theoretical and practical lessons, full time within one week
Monday to Friday from 08:00 to 15:15
Certificate
Certificate of participation of the Sommelier School Rostock.
Upon request you can take an examination at the University of Cooperative Education (BA) Mecklenburg-Vorpommern. It consists of a practical examination of 20 min, and a written test of 45 min. After successfully passing this examination you will be awarded with the title
